Sunday Evening Entertaining...
Sunday, August 15, 2010 at 09:37AM While the tomatoes are still fresh, this simple pasta recipe is the perfect thing to serve for a Sunday evening meal with a couple of close friends.
Pappardelle Pomodoro
Here's what you'll need to make this delicious, summer meal:
8 oz fresh cut pappardelle
8 oz jar Pomodoro sauce
1 1/2 oz parmesan cheese
1/2 oz romano cheese
1 oz butter
1 oz Extra Virgin Olive Oil
black pepper to taste
1 Tbsp basil chiffonade
Begin by bringing a pot of salted water to a boil. Add pappardelle and cook until al dente.
In a saute pan, heat the Pomodoro sauce and butter until the butter is completely melted.
Strain pasta well and add to saute pan.
Adjust the saute pan flame to low. Add basil, parmesan and romano cheese, and black pepper to the Pomodoro sauce and pappardelle.
Toss cheese in the sauce until blended.
Place in a pasta bowl and drizzle Extra Virgin Olive Oil on top.
Garnish with basil sprig in the center.

I can’t believe you put up a recipe that includes pappardelle pasta. I just made a batch of saffron pappardelle on Sunday to freeze for next weekend! This recipe looks so simple and will use some of the last summer tomatoes. My husband will love this!
