I Feel Like Entertaining…

Casual entertaining with a few close friends is the very best.

I'm dying to try this salmon recipe I found over at StoneGable.

Salmon En Croute With Cucumber Dill Sauce

Here's what you will need to make this delectable dish:

6 salmon fillets

1 package phyllo dough

1 stick butter, melted

salt and pepper

1 package cream cheese, room temperature

2 TBS fresh dill, chopped

2TBS fresh chives, chopped

2 TBS fresh parsley, chopped

juice of 1/2 lemon

1 container sour cream

1 cucumber, peeled and finely chopped

3 TBS fresh dill, chopped

2 TBS fresh parsley, chopped

juice of 1/2 lemon

salt and pepper

Combine the cream cheese, herbs, lemon juice, salt and pepper in a large bowl. Set the mixed ingredients aside until later needed.

Preheat your oven to 350°F.

Lay one layer of phyllo dough on your work surface, while ensuring that the rest is covered with a damp towel.

Cover the entire sheet of phyllo dough with melted butter, applying the butter gently. Repeat with a second sheet of phyllo and top with a third (do not put butter on the third piece).

Spread the cream cheese mixture over the phyllo dough. Place one salmon filet over the cream cheese mixture. Sprinkle salt and pepper over the salmon.

Wrap the edge of the phyllo dough over the salmon.

Fold both sides of the phyllo dough over the ends of the salmon.

Completely wrap the salmon, and brush the phyllo dough with butter.

Spray a baking sheet with cooking spray and place the wrapped salmon on the baking sheet. Bake the salmon at 350°F for 20-30 minutes. Be careful to not overcook the salmon. Let the salmon sit for five minutes.

In a separate bowl, mix the sour cream, juice from 1/2 lemon, cucumbers, and herbs. Place a dollop of sauce on a serving plate and place salmon over sauce.
