I told you some weeks ago that I plan to spend a lot of time at the grill this summer. I'm hoping to perfect my skills and expand my repertoire of recipes. We're a bit tired of the same old same!
Here's any easy one from Martha Stewart Living...Grilled Corn with Avocado and Cilantro
This Southwestern salad can be served on its own or as a relish to accompany a main dish.
Heat grill to medium-high. Grill 4 shucked ears of corn,rotating often,until slightly charred, about 15 minutes. Let cool slightly. Carefully cut kernels from cob. Gently toss with 1 sliced avocado,1/4 cup fresh chopped cilantro,t tablespoon fresh lime juice, t tablespoon extra-virgin olive oil, and 1/2 teaspoon coarse salt.
Really good with roasted pork loin or grilled lean pork shops.
I think we'll try that.
