Sunday Supper...Shrimp and Pasta with Herbed Goat Cheese and Asparagus

If I had a pantry like this one, deciding on Sunday Supper...or any other meal for that matter would be so easy...

Can you imagine ...just standing and dreaming and choosing? So fun!
But instead I spend a lot of time surfing Pinterest, and find some amazing recipes. Like this one for Shrimp and Pasta with Herbed Goat Cheese. It's from the blog There Goes The Cupcake.

The Recipe...
12 ounces uncooked angel hair pasta (or any pasta of your choice)
6 tablespoons (3oz) herb-flavored goat cheese
1/3 cup chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 1/2 teaspoons minced garlic
2 cups chopped asparagus
3/4 pound large shrimp, peeled and deveined
2/3 cup chicken broth
other options:
2 cups cherry tomatoes, halved
2 cups snap peas
1. Cook pasta in boiling water 10 minutes or until al dente, add asparagus during final 2 minutes of cooking. Drain pasta and asparagus and place in a bowl. Add cheese, basil, salt and pepper, stir until well blended.
2. While pasta cooks, heat oil in a large skillet over medium high heat. Add garlic, saute 30 seconds. Add shrimp and cook about 5 minutes or until shrimp are almost done . Add broth, cook 1 minute or until shrimp are done. Add shrimp mixture to pasta mixture, toss gently to combine.
Yield: 4 servings (serving size: about 1 1/2 cups.)..
Haven't decided if we will eat in the kitchen...

Yummy supper Mona. It looks great. Now, if I could only stop by around dinnertime! LOL
I am definitely going to try this reciipe since I love pasta and always looking for something different. As for the eating area I would choose either one, the kitchen for relaxed and dining room for romantic. To be honest I'll set a place just for myself in the dining room and settle in with a book, it makes me slow down and enjoy!

My daughter and I have a girl's
weekend coming up when my
hubby and son are skiing, so I
am going to make this for her.....
All the elements we both love:
shrimp, pasta, goat cheese, basil--
Talk about nourishing AND tasty!
And since it is just us, we will cozy
up I the kitchen : )

Oh my gosh! I made this last night for Valentines Day for my 3 teenage triplets and one of their friends. (I'm not exactly sure who he came to visit with, my 2 boys or my daughter) His leaving HER a box of chocolates might be a clue! Any way, thats another story. I want to tell you that it was a fabulous dish! Easy and so delish! There was actually a time of quiet as they each took their first few mouthfuls. And they are never quiet! Thanks for the recipe!
