We're still at the lake and having a blast!
We posted a picture of our go to ...Baja chicken Salad on Facebook Thursday and everyone has been sending messages asking for the recipe.
It's a family favoroite from the
5 chicken breasts grilled and chopped
1 red bell pepper, chopped
1 (14) ounce can corn kernels, drained
1 (14) ounce can black beans, rinsed and drained
1/2 cup sliced black olives
1/2 bunch green onions, chopped
1/2 cup chopped cilantro
1 cup shredded pepper jack cheese
1/4 cup mayonnaise
1/3 cup olive oil
Juice of 1 lime
Kosher salt and ground black pepper to taste
8 slices bacon, crisp cooked and crumbled
1/4 cup sunflower seeds
Sliced avocado for garnish if desired.
Combine the chicken, red bell pepper, corn, black beans, black olives, green onions, cilantro and Pepper Jack cheese in a large bowl. Combine the mayonnaise, olive oil and lime juice and pour over the mixture, mixing gently. Salt and pepper to taste. Add the bacon and sunflower seeds just before serving
Yum! Yum! Even better the second day.
