I simply adore this time of the year...Sister and I work very hard every day...but with the change of the season, weekends are filled with work too. Manual labor in the gardens and on the porches...cleaning up, planting, re-designing...You know the drill. Exhausted at the end of the day...but it feels soooo good! And what feels even better is to know that Supper has been simmering all day and you can take a bath, pour a glass of wine and relax to enjoy the fruits of your labor...
So how good does this sound?...Crock Pot Balsamic Chicken?
The recipe is from Sugar Free Mom. She uses thighs, we prefer white meat so I use breasts. It is just as good. The most tender and flavorful chicken you will ever eat. The Balsamic vinegar does not taste strong, it just makes the chicken really tender and juicy.
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion
4 garlic cloves, minced
1 tablespoon extra virgin olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs...I use breasts
Sprinkle of fresh chopped parsley
Combine the first five dry spices in a small bowl and spread over chicken on both sides. Set aside. Pour olive oil and garlic on the bottom of the crock pot. Place chicken on top. Pour balsamic vinegar over the chicken. Cover and cook on high for 4 hours. Sprinkle with fresh parsley on top to serve.
The nights are still cool so it's the perfect time to sit by the fire and possibly eat outside... This image makes me want to add a fire pit at our lake house...How divine would it be to relax right here tonight?
You can add any of your favorite sides to complete your meal. We're having Chinese Cabbage Ramen Noodle Cole Slaw and a simple whole wheat pasta tossed with olive oil and parmesan cheese.
