Sunday Supper...Happy Labor Day Weekend!

Labor Day weekend...Our last time at the lake for this season...

It's a beautiful morning...I made a casserole last night and served with salad that we will snack on for breakfast with fruit for the next two days...

My recipe...

 

6 eggs whisked till creamy

Add 1 cup whole milk and a little salt and pepper...whisk some more

Add 1/2 cup grated parmesan cheese and 2-3 ounces of feta cheese.  Stir.  

 

Chop and saute 1/2 of a white onion, red and yellow bell peppers...add fresh mushrooms and cook until the water is all gone...Add around a cup or more of fresh baby spinach and stir till wilted.

 

I keep roasted chicken breasts in the freezer so I can just pull out what I need for recipes.  I 

I chopped a breast and a half and combined with the vegetable mixture.  

Spray a glass casserole dish with Pam.  Spread the chicken and vegetable mixture in the bottom of the pan.  Give the eggs and milk and cheese one last stir to combine and pour over the vegetables.  Sprinkle a generous amount of grated mozzarella over the top and bake at 350 degrees for around 45 minutes.

You can re-heat slices in the microwave.  

Yum!

 

Another thing I've made that we will be enjoying all weekend is fresh roasted corn salad.  I can't keep my fork out of the bowl.  

I am so excited about my new way to roast corn...I'm probably the only one who hasn't been doing this...but if you haven't tried this technique...Do!  You will never prepare your corn any other way.

Throw your ears of corn in that nasty little husk on to a cookie sheet.  Roast in the oven on 450 degrees for 30 minutes.  

 

Let cool just enough to handle and then slide the husk right off.  Every silk just glides off.  The corn is sweet and crisp and silk free.  Amazing!

The rest is just chopping...

Cut the corn off of two ears of roasted corn.

Dice fresh tomatoes...I usually use grape tomatoes, but this time I added a can of drained Rotel tomatoes with green chills...loved the kick it added.

Dice very small  about 1/2 of a red onion.

Lots of chopped fresh cilantro.

One can of rinsed and drained black beans.

One avocado diced.

One tablespoon of lemon pepper and salt to taste.

Squeeze 1/2 fresh lime over all and stir to combine.

So good!  Eat as a salad with grilled chicken, chops or steak.  Or enjoy as an appetizer with tortilla chips...

 

We're just laid back and lazy all weekend!  Think I'll take a walk now before we make lunch and get on the boat.
