Sunday Supper...Grilled Pork Chops With Pineapple Salsa

It's been a crazy wonderful week!

Moved out of Fabulous Finds after nine and a half years...

Just shoved it all in the back of our new warehouse.  Still have inventory to move over from Mike's warehouse in North Little Rock and my husband's too.  Waiting till the renovation is complete.  New merchandise is arriving daily.

We will have a nice design studio in the front offices...and then it's just going to be a warehouse...nothing fancy, just lots of good stuff!  Our inventory will drastically change now that we will have the high ceilings and space to display large doors, shutters and wonderful architectural pieces as well as more furniture.

We've been busy with clients this week as well.  We have three that have just moved in  and all need furniture and accessories.

So glad there are two of us so we can run in different directions to get it all done.

Another huge thing happened this week.!

 We have an announcement to make...

 We have hired Zac Woodiel to join the Providence Design Team.  He will run the warehouse, help with design jobs and wear a lot of the hats we've been wearing.  He starts in two weeks and we can hardly wait!

Our first big team effort will be putting our new place together and it's going to take a LOT of work. 

So what's for Supper? 

Grilled Pork Chops with Pineapple Salsa, Pasta and Fresh Corn.

 

So easy... 

 

I marinated large center cut pork chops (with the bone in, adds more flavor) in bottled teriyaki sauce for an hour, then through them on the grill at medium high until done.

 

For the salsa... 

 

 

 

2 cups diced fresh pineapple

3/4 cup diced red pepper

1/2 cup chopped cilantro, plus a toss.  We like a lot of cilantro.
 finely chopped red onion to taste.  Don is not a huge onion fan.  You will want more.
 finely chopped jalapeno pepper,  seeded
1 clove garlic, minced
Juice of 1 large lime
Salt, to taste

Mix together, chill and serve at room temperature. 

 

For the corn...

Microwave 4 minutes on high for each ear.  Cut the large end off and turn upside down.  The corn slides out completely clean.  This is amazing.  You have got to try it.
